Broiled Pesto Parmesan Tofu Recipe


I recently received a care package from Follow Your Heart (thanks guys!!) with their Pesto Vegenaise in it, and after trying it on sandwiches and dunking French fries in it I was like, this vegan mayo is worthy of something BIGGER!


We are always looking for fun and different ways to cook up tofu at our house, I like to cook big batches of it and throw it in the fridge to use in various dishes throughout the week. I’ve always made other people’s recipes though so I thought it was time to give it a go and try coming up with a kickass tofu recipe myself!


First I pressed the tofu for 20 minutes to get as much of the liquid out as possible and ready it to soak up the marinade.

After an hour in the marinade it was time to broil and finish it with the sharp cheesy pesto parmesan mixture. Serve it with some oven-roasted veggies and potatoes and you’ve got a perfect meal


Broiled Pesto Parmesan Tofu Recipe

Serves 4-6


2 14oz extra firm tofu

1 cup veggie broth

2 smashed garlic cloves

2 tbs soy sauce

1/2 cup vegan parmesan (if you’re using a shredded style, chop it up into small pieces. If its a grated style you’re good to go!)

2 tbs softened vegan butter

2 1/2 tbs vegan pesto mayo (or regular vegan mayo with 1/4 tsp dried basil, 1/4 tsp garlic powder, and 1/2 tbs fresh lemon juice mixed in)

1 1/2 tbs + 2 tbs (separated) fresh lemon juice

1/4 tsp onion powder

1/8 tsp cayenne pepper

fresh black pepper



Press the tofu for 20 minutes

Cut the blocks of tofu in half widthwise

Turn those pieces on their side and cut in half again (filet style), and then cut those pieces in half (filet style) again. You will end up with 16 slabs


Mix together the broth, garlic, 2 tbs lemon juice, and soy sauce and pour it over the tofu in a dish to marinate for 1 hour or up to 5 hours. Moving the tofu around every 30 minutes or so.

Preheat the broiler and place the oven rack about 3 inches away from the broiler. In my oven thats the 2nd rung from the top. Mix together 1 tbs of leftover marinade, parmesan, butter, mayo, 1 1/2 tbs lemon juice, onion powder, cayenne pepper, and black pepper.

Spray a roasting pan with cooking spray and lay the tofu down in one layer. Broil for 3 minutes. Remove from the oven, flip the tofu slabs over and spoon 1/2 tsp of pesto parmesan mixture on each slab. Return to the oven and broil for 3 minutes. Remove from the oven again and flip the slabs over, spooning the remaining pesto parmesan mixture on top equally over the tofu. Return to the oven and broil for 4 minutes.

Serve Immediately
